On March 22nd, Dr. Dolly Garnecki of Spinal Health & Wellness in Charlottesville, Virginia taught a group of twenty preschoolers about eating healthy fruits and veggies as part of their Healthy Kids Cafe unit.
She coordinated unit teaching ideas with with preschool teachers to include creating rainbow-themed placemats to help kids color-associate their foods. They also coordinated with songwriter/musician Jay Mankita who shared his album Eat Like a Rainbow: Colorful, healthy, sustainable food songs for kids and other folks. Mankita, who’s songs have been featured on Putumayo Kids’ Picnic Playground and Chop Chop Magazine (Winter 2011), was eager to support a healthy food unit for preschoolers.

Great Beginnings Preschool teacher Miss Donna learned and played Mankita’s song “Everybody Likes Fruits and Vegetables” while teacher Miss Betsy held up pictures of vegetables for the kids to shout out during certain stanzas of the song. They sang about tomatoes, avocados, and other delicious and healthy foods.
Later that morning, they learned about how those fruits and veggies grow in the ground, on trees, or bushes, and they had the chance to taste the beautiful rainbow array of flavors first-hand.

and chef hats from repurposed plastic bags. They also had personalized chef aprons made with their handprints.
Dr. Garnecki enjoyed teaching two classes full of little chefs.
Some kids who were initially reluctant, overcame their fears and discovered new fruits and veggies that they loved like kiwi fruit, roasted asparagus, and purple cauliflower.
